JEN’S SUPER-DELICIOUS VEGAN EGGNOG

Seasonal Winter
Ingredients
  • 1 1/2 cup (cold) Distilled water (or spring water)
  • 1 Frozen, organic banana
  • 1/2 cup Raw, organic cashews (or cashew pieces)
  • 2-4 Raw organic walnut halves
  • 1 tbsp Sprouted organic pumpkin seeds (I use "Go Raw" brand sprouted pumpkin seeds - plain with sea salt. If you can't find this, use either two more walnut halves or one more Tablespoon of almonds instead.)
  • 1/8 cup Raw, organic almonds
  • 6-7 Small to medium (or 3-4 large) organic California dates (soft, and pits removed)
  • 1 tbsp Organic coconut manna (I use "Nutiva" brand coconut manna.)
  • 1 Pinch organic, pure vanilla powder (Or, you could instead use 1 teaspoon of alcohol-free organic vanilla extract.)
  • 1-2 Pinch organic ground cloves
  • 1 Pinch organic ground nutmeg
  • 2-3 Pinch pink Himalayan salt (finely ground)
  • 1 tsp Organic Ceylon cinnamon powder
  • 1 Pinch organic turmeric powder
  • Optional: 1 Tablespoon organic ground flaxseeds
Instructions
  1. Put all ingredients into a high-speed blender and blend on high (use the blender's tamper to help mix) for less than one minute, until all ingredients are well-mixed.

  2. Makes:  One large glass of super-delicious vegan eggnog.

    It tastes best if consumed right away or very soon, but can be stored for a day or two in the fridge in a sealed glass mason jar.  (Shake well before consuming one that's been sitting in the fridge.)
