Date Filled Hermit Cookie Sandwiches

Instructions

  1. Make the date filling. Combine the dates, water and sugar in a 1 quart saucepan. Bring to a boil, stirring until thickened. Set aside.

  1. Preheat oven to 375 degrees F.

  1. In a large bowl, blend brown sugar and shortening. Stir in eggs and vanilla extract. Add dry ingredients and blend well. Stir in dried cranberries, dates and pecans.

  1. Scoop 30 (2-inch) balls of dough. Place 2-inches apart onto parchment-lined cookie sheets. Using moistened fingertips, gently round out the dough and flatten.

  1. Bake at 375 degrees F. for 12 to 15 minutes, until cookies are lightly browned and are set.

  1. Remove from oven. Let cookies cool on cookie sheets for 10 minutes. Remove with a spatula to a cooling rack.

  1. When cooled, generously spoon and spread date filling over 15 cookie bottoms. Cover each with another cookie, forming cookie sandwiches. Serve and enjoy!
