CHEERFUL COACHELLA CROSTINI

Ingredients
  • 2 tbsp Extra virgin olive oil
  • 1 cup Chopped red onion
  • 1 cup Chopped peeled persimmon
  • 1/2 cup Chopped dried and pitted California grown dates
  • 1 tsp Minced garlic
  • 1/2 tsp All spice
  • 1 tsp Balsamic vinegar
  • 1/2 tsp Finely grated orange zest
  • 24 (1/3-inch thick) French bread baguette slices
  • 3 oz Goat cheese
  • 1/3 cup Chopped shelled pistachios
  • 1/4 cup Pomegranate seeds
Instructions
  1. Heat 2 teaspoons oil over medium heat in a medium skillet, stir in onion, sauté for 3 minutes.  Add persimmons, dates, garlic and all spice, sauté for 2 minutes more.  Remove skillet from heat, stir in balsamic vinegar and orange zest.

  2. Preheat broiler.  Brush remaining olive oil on both sides of bread slices, arrange slices on large baking sheet single layered.  Lightly toast both sides of bread turning over once. Equally spread goat cheese onto 1 side of bread.

  3. To serve divide date mixture, pistachios and pomegranate seeds on top of bread.   Lightly press mixture into bread slices to help toppings to stay on.  Makes 24.
