Preheat your oven to 375°F (190°C).
Wash and core the apples, leaving the bottoms intact to create a well for the filling. You can use an apple corer or a small knife for this.
In a mixing bowl, combine the chopped California dates, chopped walnuts, honey, ground cinnamon, ground nutmeg, salt, and melted butter. Mix well until all ingredients are evenly combined.
Stuff each cored apple with the date and walnut mixture, pressing down gently to ensure they are well-packed.
Place the stuffed apples in a baking dish. Pour the apple cider or apple juice into the bottom of the dish.
Bake in the preheated oven for 30-40 minutes or until the apples are tender. You can baste the apples with the juices from the bottom of the pan halfway through the baking time
Once baked, remove the apples from the oven and let them cool slightly before serving. Spoon some of the juices from the bottom of the pan over each apple.
Serve the stuffed baked apples warm, and if desired, top with a scoop of vanilla ice cream or a dollop of whipped cream.
