Bannoffee pie is the ultimate dessert. It is ridiculously easy to prepare, delicious and guaranteed to satisfy. In a twist on the classic, I swapped out the dulce de leche for an amazing caramelly sauce made by blending together California dates, heavy whipping cream and bourbon. Once you have tried this version, you’ll never look back. As the traditional dessert can be a little messy to slice and serve, I prepared individual portions which fit nicely in a muffin pan.

Next prepare the ‘caramel’ filling. Place cream, dates and bourbon in a blender and blend until fairly smooth. Feel free to leave a few small pieces of dates for texture.
Divide mixture evenly between cups in muffin pan. Top each pie with three slices of banana. When ready to serve, top each pie with whipped topping of choice and a sprinkling of cocoa powder.
