Date Stuffed Chicken Roulades

In a large skillet, add olive oil and sauté onion and mushrooms over medium heat until tender. Add 2 cups of chicken broth and chopped dates. Simmer for 10 minutes. Add stuffing mix, sage and onion powder. Cover and set aside while you prepare chicken breasts.

Place chicken breasts between 2 pieces of plastic wrap and pound until ½ inch thickness. Place approximately ½ cup stuffing mixture in center and roll breast around mixture. Secure chicken breasts with toothpicks. Season with salt and pepper.

Sauté chicken breasts in 2 tablespoons of olive oil until browned. About 4 minutes on each side. Place roulades in a baking dish and bake for 20 minutes at 350 degrees.

Place remaining stuffing in a greased small casserole dish. Bake stuffing for 15 minutes at 350 degrees.

Add remaining ½ cup chicken broth to pan and scrape bottom and sides of pan to deglaze. In a small bowl, mix flour into 1⁄2 cup cream until lumps disappear. Slowly add cream to hot broth and simmer until it starts to thicken.

Remove roulades to the serving plates. Serve roulades with sauce and additional stuffing. Serves 2
